"My Cajun Condiment
Collar"

POEM
My Cajun Condiment Collar
"Where y'at dawlin'?"
Bet'cha wonderin' what's dat hangin' round my neck,
It's my Cajun condiment collar, and yeah, it looks kinda like a wreck.
But nowadays I need dese sauces, spices and salts handy
Cause eatin' anywhere outta New Orleans is always awful bland-y.
Ya know, f'sure, a lot o' folks dat live outside my city
Think boilin' shrimp in plain ole water leaves em sittin' pretty!
Nuh uh, sez I, you crazy man? Dat dat? You must be kiddin'!
I'd rather be at da jailhouse eatin' grits and greasy chitlin'.
NOW, my Zatarains and Tabasco come wit me wherever I go
So's I can season up my shrimp an' crabs an' mudbugs jus so.
I bring along my fork an' spoon for sauces an' the like.
Cause moppin' up da last bite wit my fingas is impolite.
I attach 'em to my collar when I need my hands free
To squeeze dose tails and suck dose heads o' crawfish...ooooooo wee!
Now, when I go by Vic and Nat'ly's fer a po-boy an' a beer,
My collar's got dat extra tank and big ole napkin near.
"Hey dawlin', ya want dat po-boy dressed?" Nat'ly always sez,
"Yeah you rite!" I always say, wit lots of extra mynez!
"Dere ya go, cap" sez Vic, servin' dat samich an' dat beer,
"It's drippy and it's messy, yeah: get da best ones only here!"
"When yer done yer face'll be all sticky an' yer hands are gonna stink,
So dere's da battroom where ya go to wrench 'em in da zink."
If I comes across a sac o' oysters, I know I'm livin' rite,
How to open 'em? Never you mind, I got my oyster shuckin' knife.
Year, dat Cajun cookin's sometimes smelly as can be,
But, not to worry, I attached a sweet smellin' pine tree!
